Baked italian chicken (6 servings per recipe) my dinner tonight
2 tablespoons parsley, fresh, chopped ■1 garlic clove ■1/2 cup Parmesan cheese, fat free ■1 teaspoon oregano, dried ■1 teaspoon basil, dried ■1/2 teaspoon black pepper ■1/4 teaspoon red pepper ■1 1/2 pounds chicken breast, boneless/skinless, raw ■1/4 cup egg whites ■2 teaspoons extra virgin olive oil
Preparation ■Preheat oven to 375°F. Wash and mince parsley; peel and mince garlic. ■Combine parsley, garlic, Parmesan cheese, oregano, basil, black pepper and red pepper in a pie pan or shallow dish. ■Dip chicken pieces into beatne egg whites and then into cheese mixture. ■Place chicken in a shallow baking pan lightly coated with cooking spray. ■Drizzle olive oil over chicken, and sprinkle with any remaining cheese mixture.
■Bake for 25 minutes or until tender and no longer pink inside. ■Serve immediately with a tossed salad, steamed broccoli and herb roasted potato wedges, if desired.
